קולינריה במלון בוטניקה החדש בחיפה

מלון חדש נולד בחיפה, במושבה הגרמנית, למרגלות הגנים הבהאיים. השם 'בוטניקה' מתאים למראה הגנים היפהפיים הסמוכים למלון. המלון תוכנן על ידי האדריכל גיא ארבל ואדריכל הפנים נסטור סנדבנק. הכול מעוצב יפה וברוחב יד עם עושר של צבעים וצורות. ההשראה לבחירת יצירות האומנות הרבות התלויות במלון הגיעה גם היא מהגנים הבהאיים.
באזורים הציבוריים ריהוט מודרני, נוח בצבעים אלגנטיים. בורדו, אפור בהיר ועוד. כריות נחמדות זרוקות הל הספות והכורסאות לתוספת נוחות. סידורי פרחים קטנים מפוזרים בכל מקום. פרחים אדומים גדולים עם קישוט צהוב בולט והרבה ירק. ספרי אומנות רבים מפוזרים בשטחים הציבוריים של המלון ובחדרים.
פינוקים בחדר
החדר שקיבלנו, סטודיו גדול ומרווח, עם מיטה ענקית ונוחה ועם אזור ישיבה הכולל ספה, כורסאות ושולחן קטן. יש במרכז החדר טלוויזיה גדולה על עמוד, שאפשר לראות אותה גם מהמיטה וגם מאזור הישיבה.
כשהגענו חיכו לנו על שולחן הכתיבה קופסת ממתקים, צלחת פירות, צלחת עוגיות ובקבוק של יין הבית -- כדי להתרענן לאחר המסע מתל אביב לחיפה.
ארוחת ערב שבת
כניסה מזמינה
ארוחת הערב מוגשת באולם גדול. בכניסה לאולם מספר מכתשי אבן שחורים ובהם תבלינים – רמז למצפה לסועדים. מן הכניסה רואים ארבעה או חמישה מזנונים ארוכים ועליהם מבחר גדול של מנות. ואז מגיעים לשולחן ערוך למופת עם מפה מגוהצת, מפיות אישיות, סלסלה ובה שתי חלות קטנות, ובקבוק קטן של יין לקידוש.
מזנון בשר עשיר
מזנון הבשר העשיר הוא המזנון היחידי המאויש. מאחורי מנות הבשר העיקריות עומדים שפים וחותכים מנות נדיבות לבקשת הסועדים: צלעות בקר ונתחי פילה צלויים בתנור וצלעות טלה על הגריל. מלבד העמדות האלה יש עוד מבחר גדול של מנות בשריות שהסועדים לוקחים בעצמם.
דגים
למי שרוצה גם דגים מחכה תבנית של סלמון חם מבושל בציר ירקות ומגשים קרים של סלמון מעושן ושל סביצ'ה של דג לבן.
מרקים
לחובבי המרקים מחכים שני סירים עמוקים עם מרק כתום ומרק צח. וביניהם מבחר תוספות למרק: קרוטונים, שקדי מרק, אטריות וגם ערמונים אפויים.
פחמימות
כדי ללוות את המנות החלבוניות בתוספות של פחמימות אפשר לבחור באורז עם צנוברים, קינואה או פולנטה שבתמונה. על המזנון יש בנוסף עוד אורז כתום וכן מבחר של תפוחי אדמה צלויים.
ירקות מבושלים
באגף הזה עומדים מגשים של ירקות פרוסים וצלויים בסגנון אנטיפסטי: חצילים, קישואים, בצלים סגולים ולבנים, פלפלים ירוקים ואדומים ובטטה. ויש גם ירקות ממולאים בבשר שמוכנים ברוטב עגבניות.
ירוקים
ואסור לשכוח לקחת גם משהו מאגף הירוקים: סלט עלי ביבי עם אגוזי מלך, עלי אנדיב בלגי ואספרגוס ירוק מאודה. לידם יש עוד הרבה סוגים של חסה ונבטים.
פירות נקיים וחתוכים
למי שרוצה קינוח קל מחכה מזנון של פירות נקיים וחתוכים: אגסים, תפוחים וענבים. וכמובן אבטיח ומלון צוננים.
עוגות מקושטות
ולמי שיש עוד כוח מחכה אוסף של עוגות קונדיטוריה מקושטות, הכלולות גם הן בארוחה.
