בדרום תל אביב, קרוב למתחם נגה ביפו נמצאת המסעדה מנסורה. זו מסעדה גדולה ומרווחת עם עיצוב פשוט ופונקציונלי. התפריט מעיד שבמטבח יודעים להוציא מנות איכותיות עם טעמים מקומיים וים-תיכוניים.
שני השפים, שהם גם בעלי המסעדה, הם אלעד דגן ו-טל סוחמי. שניהם קיבוצניקים, בני משמר הנגב. את המסעדה הם קראו על שם "ביר מנסורה", שהייתה באר סמוכה למשמר הנגב. שני הקיבוצניקים התעניינו בבישול כי אבא של אחד מהם בישל עבור חברי הקיבוץ, שנהגו לאכול בחדר האוכל. בתל אביב הם התחילו לעבוד במסעדה משובחת – שילה – שברחוב בן יהודה. העבודה במסעדת שילה נתנה להם את התשתית הקולינרית הטובה, ובמסעדת "מנסורה" שלהם הם מגישים מנות לתפארת.
התחלנו עם מרק "אחו בלנקו" שזה מרק ספרדי קר על בסיס שקדים מולבנים מרוסקים ושום. מרק סמיך וטעים המוגש עם פרוסות ענבים הצפות עליו.
כמו כן הגיעו לשולחן גם לחמניות מקושטות בבצל אדום קצוץ שנקראו "פלעצלאך". הפלאצלאך המקוריים הם מאכל אשכנזי ידוע של לחמניות שטוחות מכוסות ברצועות בצל לבן מטוגנות היטב. אבל גם הפלצלאך של מנסורה, עם קוביות של בצל סגול היו טעימות.
מנת ביניים אחת שאכלנו הייתה מוס כבד עוף, חלק וטעים, שהוגש בצלוחית קטנה וקושט בעירית קצוצה דק. לצידו היו כמה פרוסות דקיקות של לחם מחמצת אפויות היטב שהתקפלו תוך כדי האפייה ונראו כמו טווילים. וכיוון שנהוג לאכול כבד בתוספת של משהו פירותי – כאן הוגש, לצד המוס, גם פירה אגסים.
מנת ביניים נוספת הייתה טרין לשון. לשולחן הובאה צלחת ועליה שלושה גלילים קטנים שהוכנו מבשר לשון בקר מבושלת. הבשר נקצץ ותובל היטב. הגלילים, שהיו מחוממים מעט להדגשת הטעם, הגיעו עם לחמניית פלעצל חצויה וקלויה. בצלחת היו מעט חרדל וחזרת טרייה מגוררת לחיזוק הפיקנטיות, וגם פרוסות דקיקות של צנון מוחמץ.
המנות העיקריות היו שתיהן על בסיס פסטה ביתית טרייה. מנה אחת הייתה של "ספייר ריבס טלה" ללא העצם, והמנה השנייה הייתה של בשר לחי בקר שבושל שעות רבה והיה רך מאוד וטעים ביותר. גם הוא הוגש על פסטה טריים וקושט במעט חזרת.
הקינוחים היו צבעוניים ובעלי מספר מרקמים. קינוח אחד היה סורבה אפרסקים שהונח על קוביות מנגו קטנות וקושט בעוגיות קצף עם פקאנים. הקינוח השני הורכב מעוגיות פיננסייר בטעם "מחלב" (גלעיני דובדבנים כתושים)*, גלידת יוגורט, קולי שזיפם וגרעיני דלעת מקורמלים.
בסך הכל נהנינו מארוחה טובה, מגוונת וטעימה. השירות היה טוב והמלצרית הייתה בקיאה בתפריט, שזה תמיד דבר חשוב במסעדה.
*"מחלב" הוא תבלין אותו מכינים מן הגלעינים של סוג דובדבנים הצומחים על עץ בשם "מחלב". את הגלעינים טוחנים לאבקה גסה לשם שימוש במאפים ותיבולם. זהו תבלין חזק ומשתמשים תמיד בכמות קטנה ממנו.
